Lemon Basil Shrimp Spaghetti Squash

Hi Everyone!

First of all, if you are looking for today’s workout you can find it here: Arms, Back & Cardio Workout. If you have already worked up an appetite, you are in for a treat with today’s recipe! It’s so delicious that I can’t wait to make it again! My friend, Stephanie, shared this recipe with me, and gave me permission to share it here with all of you. She is one of the best cooks I know, so it’s always a treat when she decides to share a recipe. Personally I love almost anything that has shrimp and/or lemon. This combination is scrumptious.

Spaghetti Squash is delicious, and full of nutrients, and fiber. It’s a great alternative to use in dishes that normally use pasta. There are only 42 calories in a one cup cooked serving of spaghetti squash. In comparison, one cup of cooked spaghetti has around 200 calories. After baking the squash, the noodles separate into spaghetti like strands, when scraped from the rind with a fork.

Some of the health benefits: High in Fiber, Vitamins C & A, Pottasium, Calcium, beta-carotene, Folate, Omega 3 and Omega 6. Remember, the more colorful your diet is, the wider the range of nutrients you are consuming.

I didn’t check my spaghetti squash at 45-minutes, so the noodles were a bit softer, but they were still delicious and had a nice texture. Longer cooking time will lead to softer noodles. My notes about changes I made to the recipe are included with the ingredients list below.

Ingredients:
-1 spaghetti squash
-1/2 to 1 tsp olive oil (estimate)
– 2 T minced garlic (I used the jar variety for this)
-salt and pepper
-2# raw jumbo shrimp, peeled and tails off (I actually used frozen/pre cooked and skipped the baking step for time)
-1T herbs de provence olive oil (could use regular) *I used 2T extra virgin olive oil and mixed in Herbs de Provence dried basil and gently heated it.
-1T garlic olive oil (could use regular)
-1/4 to 1/2 small onion diced
-1/4 cup sliced mushrooms (optional-I was out so I didn’t use them this time)
-5-6 cloves of garlic minced
-1 tube of basil paste (I didn’t have this so I used dried basil mixed in with the Herbs de Provence & the olive oil)
-1T lemon zest
-Juice of 2 lemons
-1 tsp Penzey’s Florida seasoning (lemon pepper or similar would also work-I forgot to add this!)
-1/2 of fresh basil chopped (optional) *My fresh basil went bad, so I skipped this, and used some sautéed spinach. 
-Pam cooking spray
** all measurements are an approximation aside from the garlic oil and herbs de provence oil. I don’t really measure my ingredients/seasonings when I cook**

Preheat oven to 400 degrees F. Cut spaghetti squash in half and remove seeds. Drizzle with small amount of olive oil and salt and pepper. Place a tablespoon of minced garlic on foil lined cookie sheet and place one half of squash over top of garlic face down (rind up). Repeat with other half of squash. bake at 400 about 45 min to 1 hr or until you can poke rind with a fork. Once done, scrape insides with a fork into a bowl to form “noodles” and set aside.

Peel shrimp and season with salt and pepper. spray large skillet with Pam and cook shrimp in batches in a single layer until pink. place on plate and set aside.

Add garlic oil and herbs de provence oil to skillet and saute onions and mushrooms. Then add lemon zest and garlic and saute another 1-2 mins. Add 1-2 good squeezes of basil paste (most of tube) and lemon juice and stir to combine.

Once sauce is combined and heated, add squash and shrimp and Penzey’s Florida seasoning (or Lemon Pepper-I actually omitted this and the flavor was still fantastic!) and stir to combine. Add fresh basil if desired.

Hi Everyone!

I have three workout videos below! You can choose any combination of videos that you like, depending on how much workout time you have.

For today’s workout you can pick one of the videos below, and pair it with 30 Minutes of Interval Cardio.

The first video is a 5-Minute Arms/Back workout. Grab some dumbbells and you are ready to go. I like this routine, because it’s quick but effective, and you can repeat it if you have time.

The second video is a cardio option. With today’s workout you can do up to 30-Minutes of Interval Cardio of Choice (alternating low intensity and high intensity). You can do this with running, walking, or the jump rope option below.

The third video is a 20-Minute Arms & Abs HIIT. I included this one for those of you that want a longer workout without repeating multiple rounds of the same routine.

All of the workouts are effective and will help you get results.

My workout week has been terrible (as in non-existent). Earlier this week I just had a lot going on, but yesterday I woke up with a 101.3 degree F fever, headaches, body aches, and no appetite. I am not used to getting sick. Typically the worst I deal with is Sinus/Allergies and Headaches. It seems like since having my son I have been prone to getting sick more often. In addition to that, my sister found a mole on my scalp when she was doing my hair earlier this week. As far as I know, I never had a mole there before, so I am going to the doctor to get it checked out today.

If you ever have skin changes like that, I recommend going to get them checked out immediately. Hopefully, it turns out to be nothing, but if you do have a cancerous change, early intervention can quite literally save your life. Prevention is best, but early intervention is a close second.

I hope you all enjoy today’s workout routine. I will be back again with new workouts soon. I wasn’t able to eat yesterday, so I am going to focus on hydrating and fueling my body.

Hi Everyone!

Today’s workout will strengthen and shape your entire body, while providing a great fat burn. This is a throwback workout from last summer. Unfortunately I have been having a very bad workout week. Timing just hasn’t worked out in my favor, partially due to my own planning, and partially because my son has been off his daytime schedule a little bit the past few days. My mom thinks that he is teething already. I am going to try and get through this workout tonight. Even if I can only get though part of it that will be better than doing nothing.

I have also been very focused on decluttering and cleaning my house. We own too much, and I want to get rid of things. I don’t like the way a cluttered environment makes me feel. Do you think your environment impacts how you feel? There is a lot of research to show that clutter can actually increase stress levels, and make people eat a higher number of calories (particularly in cluttered kitchens!)

Anyway, back to today’s workout! This workout incorporates exercises for your lower body, arms, and core. The first section uses a dumbbell. Select a weight that is challenging for you. I used one 20-pound dumbbell, but you can use two dumbbells or change the weight to meet your needs. Select an amount of weight that is challenging for you, but also allows you to maintain  your form throughout each exercise.

I kept my reps lower during this workout to make sure I was able to complete each exercise with proper form. Heavier weights will help you build muscle, increase your metabolism and burn fat quickly, so don’t be afraid to challenge yourself! If you don’t have heavy weights (or any weights!) you can complete the exercises with body weight only, and focus on getting in the higher number of reps with good form.

Hi Everyone!

Welcome to Week 5 of my 6-Week Workout Challenge! I have a new lower body workout video headed your way, but in the mean time I have this quick 10-Minute Boot Sculpting Workout for you. I definitely recommend repeating this workout and pairing it with 30-Minutes of Easy paced cardio.

This routine uses a lot of my favorite lower body exercises. I used two 20-lb dumbbells and a chair during this workout. A bench or sturdy surface will work if you don’t have a chair you can step up on.

This workout incorporates multiple exercises that isolate one leg at a time. It helps decrease muscular imbalances (we have a dominant leg, just like we have a dominant hand). Single Leg Exercises, also force the muscles to work harder during each move. The added balance, adds some bonus strengthening for your coordination and core.

POSTPARTUM & BEYOND: WEEK 4: WORKOUT DAY 27: Full Body Burn

Today’s workout is a Full Body HIIT Fat Burning Workout. Are you ready to make yourself stronger and develop more endurance? Let’s work up a sweat!

Week 4 Workout Schedule:

  1. Lower Body Sculpt & Fat Blast: 20 Minutes Per Round + 30-Minutes of Easy Cardio
  2. Interval Cardio Day
  3. Tighter Tummy Workout + Moderate Intensity Cardio
  4. Rest Day
  5. Arms & Upper Body + 30-Minutes of Easy Cardio

  7. Full Body Workout + Easy Cardio

I recommend pairing this workout with 30-Minutes of Cardio of choice. I have a throwback workout posted below, because I ran out of time to film. We spent the morning at Jesse’s cousin’s cross country race, and they had a family day celebration afterwards. We didn’t get home until much later than anticipated.

I did however, have the opportunity to go for a run without the stroller. I took it, and I am slowly but surely building my running speed back up. We live in an extremely hilly area, so I was very happy with my paces during my run. More importantly, I felt fantastic. I felt stronger, less fatigued, and it felt great to work up a sweat and just go.

I did my run at a moderate effort (not full out, I could still talk, but it was definitely a working pace). With today’s workout I am recommending easy paced cardio. I did a more intense cardio because I wasn’t able to fit in the planned workout.

Do something today that is good for you, and makes you happy. It can be hugging someone you love, taking some time to meditate, sitting outside and drinking a cup of coffee. Just find a moment today to enjoy your life, and where you are right now, at this moment.

A lot of the stress we experience in life comes from living in the past, or focusing on the future. Taking time to pay attention to the moment you are in can be hugely beneficial to your mental, emotional, and physical health.

Today is an Upper Body Day! I have an Arm Workout posted below to help sculpt, shape and strengthen your arms. I mentioned in my Facebook Live post that I am behind in filming today. (Update: The new workout video is posted below!) It was a hectic day, and I was thrown off my schedule. We may get to film the workout tonight, but most likely it won’t happen until tomorrow. That means I have a throwback workout posted below. We have Maverick’s bedtime schedule down pat, but his daytime routine has been thrown off a bit since his doctor’s appointment earlier this week.

Hi Everyone!

Today’s workout is all about the Core. This exercise routine will work your midsection from every angle, to maximize strengthening and core stability. This will help you achieve noticeable results, because you are using all of the muscles of your midsection.

To achieve the best results with this workout I recommend pairing it with 30-Minutes of Moderate Intensity Cardio. That means that during your cardio you could go harder if you had to, but you are glad that you don’t need to.

Sadly, I missed my cardio when I filmed this workout. We have been trying out using two cameras while filming, so that you can have two different camera angles to see moves from. It worked great, except that my video editing program kept freezing while I was trying to edit! I decided to just post the normal realtime video so I don’t have to keep you all waiting for today’s workout. I am going to try out some new editing programs to see if I can get the hang of integrating multiple camera angles. I’m learning as I go and teaching myself, so if you have any recommendations or techniques to make editing easier let me know in the comments below.

Things have been crazy here! Maverick had his doctor’s appointment yesterday for his 10-Week check up. He is growing so much! I knew that he was a big baby, but I didn’t suspect that he was taller than 98% of other babies his age!

That also means that I am 10-Weeks Postpartum. I am seeing progress and feeling stronger! I feel ready to increase the intensity a little bit. Hi Everyone!

Welcome to Week 4 of my 6-Week Workout Challenge! I can’t believe how quickly time is flying by! Last week got a little bit crazy, and I wasn’t able to film two of the workouts. I posted throwback workouts, and I will still film those at some point, but instead of letting myself get further behind with filming I decided to start over and focus on getting the workouts filmed for this week.

That’s life, things happen (even fitness bloggers miss workouts sometimes!) Don’t let it throw you off track, just get right back into it. Consistency is key, and long term consistency is what we develop when we keep showing up for our workouts, even when life has thrown us off track.

Jesse ran a fantastic Half Marathon yesterday, and WON! It was fantastic, despite some really tough running conditions (95% humidity and mushy trails due to a recent rain). He trained very hard, and I am so proud of him. We are going to be starting “Sunday Run-Day” next week. So we will have information every week for runners. If you have specific running questions post them and you may see them answered/addressed in a future post.

Today’s workout is a fun challenge for the lower body. I utilized jump rope intervals to get an added fat burn, but you can vary with your cardio of choice. We work the calves, thighs, and butt from multiple angles in this routine to maximize our results.

One round of the workout will take 20-Minutes. Pair it with 30-Minutes of cardio of your choice. If you decide to go for three rounds you can skip the added cardio, because you are going to get a fantastic burn with the cardio bursts in the workout.

Hi Everyone!

Today is Day 21 of my 6-Week Workout Challenge. I have another Interim Throwback workout for you! I have been doing a ton of behind the scenes blog work the last few days, and I am still behind on the actual filming. Filming workouts is just a portion of what it takes to run a Fitness blog/website. I did film a quick stretch Live on Facebook yesterday morning, so I will get that posted here as well, but I do still have two new workouts headed your way.

I mentioned it in a previous post, but our normal camera decided to stop working (in the middle of filming it said “error” and then never turned back on!) In the interim we are filming using my iPhone. The downside is that means I can’t use our tripod to film while Jesse is at work. He has a race this weekend, so I didn’t want to interrupt his training schedule, but we will be back on track with filming, and hopefully I can get a setup going where I can film more workouts during the day.

Either way, two new workouts are still headed your way! You can do 1-3 rounds of this workout. For cardio I recommend pairing this workout with a walk. Nothing crazy, we got in a great week of workouts, and you just got in some great cardio during this one.

Today’s workout is focused on Arms and Back. I have a throwback workout posted below. I will be filming the new Arms & Back workout, but I haven’t gotten to it yet. Life as a new mom is amazing, but scheduling things isn’t as easy as it used to be. I am still getting in my workouts, but the schedule is much more flexible!

Until the new workout is posted I have shared an older Arms and Back workout video below. This is the schedule for the week so far:

I love Hula Hooping, so if it gets anyone else to have a good time while getting in a good workout I will consider this day a success.

Today is an Interval Cardio Day. That means today you are going to work hard, and get sweaty! Are you ready?

Treadmill Workout Breakdown. ***This workout ranges from a 12 min/mile pace to a 6:40 min/mile pace, you increase by .5 on the treadmill each minute. You can adjust this workout for your own level to make it faster or slower. You can even adjust the length of the intervals, so that you start out doing 30 seconds at each pace, and build up to 60 seconds. Adjust the speeds to your level.***

For my Cardio today I am going to do a Spin class. Jesse has a race this weekend, so he wanted to do some cross training. Spin is a great way to get in some endurance/cardio and work on leg turnover, without pounding his legs before the race. I haven’t taken a spin class since I was pregnant, so I am excited to try it out again. The class will be 45-Minutes long, so I will do one round of today’s workout, plus the 45-minute class for a total workout time of 60-Minutes.

I did a Facebook Live chat today on my page: @MelissaBenderFitness and got some great feedback, so I will definitely be doing that again in the future. I won’t be filming the new core workout until this evening. In the mean time I posted a Throwback Core workout option below. I will get the new workout uploaded as soon as I can, and post it here. Update: The New Workout Video is Below. Don’t forget, if you have a Diastasis, substitute the Diastasis Workout Video for this one. That video is great for the Deep Core Muscles even if you don’t have an abdominal separation.

Welcome to Week 3 of my 6-Week Workout Challenge! I fought some technology issues with getting workouts published this weekend. It took a long time, but I finally won! Friday’s Full Body Workout  video was finally published yesterday morning.

I have posted links to last week’s workouts, and the schedule for this week. I took an unexpected rest day yesterday, so I had to adjust the schedule a bit. I was sore, tired, and trusted from fighting to upload last week’s full body workout for so many days.

Hi Everyone!

Today is a rest day. Take the day off, recover, and get ready for Week 3.

Rest is just as important as work, so don’t skip your rest day! This is the time when your muscles recover and grow stronger.

How are you feeling so far with this challenge? I feel stronger, but I know that I really need to focus on the eating side of things as well. I am breastfeeding, and since I started working out I notice that my appetite has skyrocketed.

I will be posting recipes this week. Since I am on maternity leave from work I am cooking a lot more. All those pinterest recipes I saved are finally getting made now that I have more time.

Good Morning Everyone!

It’s workout Day 13! The new workout won’t be posted until this evening so I have posted an alternate workout below. It’s a quick 20 minute HIIT workout that combines jumping rope and squats. It’s a great workout for fat burning and strengthening.

For a few of the moves I used dumbbells, but all of the exercises can be performed with or without weights. It’s important to work to your own level and challenge yourself.

If you don’t have a jump rope you have a few options: rope-less jumping (same movement sans rope), high knees, or mountain climbers. Another fun alternative is hula hoop intervals. 🙂 Your workouts should be something that you enjoy and have fun with. Don’t be afraid to get creative with your workouts and add something you enjoy!

Good Morning Everyone!

It is Day 12 of our 6-Week Workout Challenge. Today is a Rest Day or an Easy Cardio Day. For easy cardio don’t do anything to get your heart rate up high. Easy means exactly what it says. You should be able to chat and not be out of breath. The goal is to get your blood flowing, but allow your muscles time to heal from the work you have put in so far this week.

We have a tough workout scheduled for tomorrow. So get ready to get sweaty, and enjoy your easy day! I posted two videos below: a simple stretch, and a recovery yoga flow.

Postpartum & Beyond: Week 2: Workout 11: Arms & Back Strengthening

Hi Everyone!

Welcome to Day 11 of my 6-week workout challenge. Today we are focusing on Arms and Back.

I was surprised at how much strength I lost in my arms and back during pregnancy & the postpartum period before I was cleared to workout. Exercises that used to be fairly easy for me have become difficult. Pull-ups aren’t happening at all, and I continued them into my pregnancy well into the second trimester, until I started to feel like they were putting pressure on my abs. Pushups are getting a little bit better, but are still a challenge, and my Dive Bombers need a lot of work.

My shoulders are feeling a little bit sore as I type this. That is most likely from the workouts and holding my son. I definitely need to create a shoulder/back stretching program so I can keep limber in these areas.

I haven’t filmed the new workout for today yet. (Update: The New Workout Video is Below) I know, I said that I was going to film it today and be caught up. My baby boy was having some gas pains this evening (I could feel the bubbles moving around in his poor little belly!) and he needed to be held and comforted. I ran out of time to film, so I won’t be able to film it until tomorrow.

I have posted an alternate Arms/Back workout below. As soon as the new video is up I will add the video to this page. You can do either workout.

It’s Day 10 of my 6-Week Workout Challenge.

Today is a Cardio Day. Get ready to sweat, because it’s an interval Cardio Day. That means we are going to be working at a high intensity.

For the Runners. Check out: Track or Treadmill Workout for Faster Running Paces. This is basically the workout I am doing today, but with recovery (easy pace) laps on the track between each hard interval. This can also be adapted for running, by completing one hard speed walking lap on a track, alternated with a comfortable walking pace.

The HIIT video option is posted below.

There are many ways to do an interval workout. The basic concept is the same one we use in most of my workout videos: high intensity work, paired with easy or resting periods in between. I talk about some options for your cardio in the video. You can jump rope, run, walk, swim, cycle: whatever feels best to you. Make this program your own, so it’s something you enjoy, that you know you are doing to improve your health.

As I mentioned in the video, I am also aiming to get in around 15,000 steps today (including the run!)
