Hi Everyone!

It’s workout time again! I have a new Core Workout for you today. Today’s workout exercises the core from every angle, and in all planes of motion. This routine focuses on strengthening & stretching your core to develop, long & lean muscles throughout the mid-section.

I recommend pairing this workout with cardio for additional fat burning benefits. I added a 10-Minute Jump Rope workout video below. You can also choose running, walking, or a HIIT workout of your choice as a cardio alternative.

I have noticed that my back is not as flexible as it used to be, so I will be posting some great back stretching routines to increase flexibility. This routine incorporates many movements that are focused on stretching the abdominals and back.

Have fun with today’s workout!

Hi Everyone!

Today I have a Full Body Fat Burning Workout for you! This workout takes 16-Minutes Per Round. It’s a great workout for building strength and definition, while also burning fat. This was my second time this week going through this workout.

I did this workout with Jesse, Jayson and Jon earlier this week. We had a personalized Boot Camp, and followed it with a 2-mile Run outside. They were both troopers, and really pushed themselves during the workout. Hopefully they will agree to be in a video in the near future!

They twins (Jayson & Jon) have been wonderful hosts, showing us all over Los Angeles and the surrounding areas. Our trip has been to short, but I still have a few days off of work to get home and get in some more workouts to share with you all here.

I hope you like today’s workout! I found it challenging, and effective. Remember to push yourself for maximum reps. You should always be focused on form. If you start to lose form, slow down, or take a quick break, and get right back to it.

I posted an article earlier today. You can check it out here: Lean & Fit: 10 Tricks to Creating a Workout Program & Diet to Achieve Your Fitness Goals. The article has a lot of great information, and addresses some of the main questions people often send to me.

Have fun!

Hi Everyone!

I hope you are ready for another great workout! This is a standing lower body workout. It is definitely going on my list of favorites! My legs were burning during this one!

This workout will challenge your lower body in all planes of motion. It’s a balanced workout to challenge and shape your glutes, thighs and legs. If you want to amp up the intensity even more you can add dumbbells or a weighted vest to increase the challenge.

Nicole joined me for this one. We have been best friend since second grade, so it was great to have her in a workout with me! It is such a blessing to be able to share fitness with your friends. I love knowing that we are making ourselves healthier as a team.

Prior to filming this workout I did a 4.54 Mile Run outside at an average pace of 8:15/mile. Nicole did a 2 mile run before our workout. Typically, I recommend running after a workout so form isn’t compromised. Sometimes I switch the order because I like to vary the challenge so my body doesn’t adjust.

Lean & Fit: 10 Tricks to Creating a Workout Program & Diet to Achieve Your Fitness Goals

Standard

Hi Everyone!

If your goal is to be Lean & Fit you probably already know that this requires a commitment to both your workouts and your diet. Below I have listed 10 Techniques to improve your ability to achieve your fitness goals.

Each of these techniques are worthy of their own blog post, but I hope you find this summary helpful to helping you achieve your goals!

10 Tricks to Creating a Workout Program & Diet to Achieve Your Fitness Goals

1. Be Consistent: This is the number one factor that will help you achieve your goals. This applies to exercise and diet.

A large part of consistency is creating a sustainable program. You want to create a healthy lifestyle that you can maintain. How much time do you have to exercise, cook, meal prep? That varies from one person to the next. Figuring out what is right (and realistic!) for you is a huge part of achieving your goals.

Once you figure out how much time you have to workout and meal prep, create your workout schedule.

2. Create a Tracking System: Record your workouts and meals. You can write your workouts down on a calendar, or use photos to track your workouts and progress.

I prefer writing my workouts down on a desk calendar. It gives me a quick visual, and if I miss several days in a row, that’s a big motivator to get moving! Research has shown that tracking your fitness and meals improves your results. There are plenty of meal tracking apps: MyFitnessPal is a popular tool/ap that I have used.

Tracking your food can also improve your awareness of what you are eating, foods that trigger over-eating, and any food intolerances you might have.

3. Figure Out How Much You Should Be Eating: Calories are not your enemy. Calories are fuel. You don’t want to starve, but you don’t want to overeat either.

Think of it this way: You don’t drive a car around on empty and expect it to perform well. You also don’t fill up your gas tank and continue to pour gasoline all over your car and onto your seats. Both techniques are asking for trouble.

HandGuide_PortionControl

Under-eating and Over-eating will sabotage your results. So how the heck do you know how much to eat? Unfortunately, this varies by individual. I wish there was a quick and definite answer I could give you, but it requires some experimentation on your part.

For people who have been on a low-calorie diet for an extended period of time I recommend increasing your caloric intake. Basically, when you restrict your calories for an extended period of time your body responds by decreasing hormones related to weight loss (T3, Leptin and others). As a result, your metabolism slows down and you plateau. You want to slowly increase your calories back to a maintenance level (the amount of calories you can consume without gaining weight). This has to be completed slowly to determine what your personal level is. Try adding only 50-calories per day (about 1/2 an apple or Banana). Maintain this for a week. Each week you can either increase your daily intake by 50-additional calories or hold at your current level. As long as you aren’t gaining a significant amount of weight you can keep adding calories.

If you are Over-Eating (or maintaining, but want to lose weight) you want to start decreasing calories slowly, and figure out how much you can eat while losing weight. Remember, if you are creating a healthy lifestyle you want to figure out a caloric deficit that you can maintain throughout your weight loss. Extreme cuts in calories are not sustainable. As soon as you go back to eating normally you will re-gain weight. By slowly cutting your calories you can achieve weight loss, while maintaining satisfaction in your diet. It will also be easier to maintain your metabolism, and figure out your maintenance point when you have achieved your goal weight.

Whether you are dieting or want to maintain your weight, you want to be able to do that on the highest amount of calories your body can handle without gaining weight. This allows you to have fuel for energy, workouts, and maintaining your hormone levels & metabolism.

4. Workout 3-6X Per Week: Exercise at least 3X per week for 30-60 Minutes. You want to workout hard enough to sweat. The benefits of exercise extend beyond your weight, and influence your current and future health. If you want to be Lean & Fit you must combine a healthy diet and a consistent and challenging workout program.

bootcamp with lenny yt

Your workout program should incorporate Cardio and Strength Training. I prefer high intensity workouts so I can maximize my workout in a short period of time. If you like to follow a plan, but don’t know where to start pick one of the programs below:

12-Week Bikini Workout Program
30-Day Fitness Challenges
10-Week BodyRock BootCamp Series

When you are creating or following a workout program you want to ensure that you are creating muscular balance. How do you know if your program is doing that? The exercises that you are using should work your body and muscles in every direction. For example: to work your core you should exercise the front, sides and back. The same goes for legs and arms. You want to work the joint in each plane of movement. The different planes of motion recruit different muscles.

5. Hydrate: The human body is more than 60% water. Your Brain and Muscles are 75% water, blood 92%, and bones 22%. The human body has trouble differentiating between hunger and thirst. Staying hydrated is a simple way to reduce excess calorie consumption. Water improves your metabolism and feelings of satiety (fullness).

water

64 ounces of Water

Water helps your blood transport oxygen and nutrients to your muscles. This allows you to workout more efficiently. It will also lubricate your joints and decrease your risk of muscle cramping.

Caution: It is possible (and dangerous!) to over-hydrate. There are two ways to over-hydrate: Drinking so much water that your kidney’s can’t keep up, or if your body suffers from a condition where you retain water.

6. Incorporate High Intensity Exercises: High intensity interval training is a fantastic technique to utilize for maximizing fat burning, while maintaining lean muscle mass. There are many techniques you can use to incorporate High Intensity training into your workout program.

HIIT can be completed with running/sprinting intervals, cycling, or exercise programs. HIIT alternates low to moderate intensity intervals with high intensity intervals. This workout technique burns a lot of calories during the workout, and continues to burn calories for up to 24 hours post workout.

Interval Workout for the Treadmill

7. Use Weights: Weight training can help you achieve faster gains in strength and aesthetics. Muscle mass is much denser than fat. Building muscle is an automatic boost to your metabolism. One pound of muscle burns an extra 50 calories per day at rest. That means if you are able to add 10 lbs of muscle to your frame, your body burns an extra 500 calories per day at rest. That added muscle also has a higher calorie burn during every workout you do. Did you ever wonder why men have an easier time losing weight? Typically their higher percentage of muscle has a lot to do with this!

If you are a female, don’t worry that adding muscle to your body will make you bulky! It won’t! Getting bulky takes a lot of work and effort for a female. It’s not something that just happens. Muscle is what gives your body shape. Round butt, sculpted arms, and tighter midsections all get their shape from muscles.

muscle-2Bvs-2Bfat

8. Plan Your Meals: Planning sets you up for dietary success. It limits mindless snacking, and allows you to prep food ahead of time. When you have healthy options on hand and ready to go you are less likely to go outside of your diet plan.

meal prep

The easier you make your diet to stick to the more successful you will be with it! Consider planning 1-2 days per week where you cook some food in bulk. Separate it into easy to grab containers, and store in the fridge for easy meals or meal additions.

Check out: Abs Are Made in the Kitchen: Meal Prep

9. Get Enough Sleep: Lack of sleep decreases your energy, motivation, and performance during workouts. Getting less than 6-hours of sleep per night is linked to increased weight gain. It is much more difficult to find motivation to get in a hard workout when your body is fatigued. Research has also shown that human beings have difficulty recognizing fatigue and sleep impairment, although fatigue impacts the body similarly to being over the legal alcohol limit for driving.

10. Know What You Are Eating: This one sounds simple enough doesn’t it? Have you ever looked at an ingredient list on some pre-packaged foods, and thought “What the heck is that?” When you create your meals at home you can ensure that you are getting a well balance diet with plenty of nutrients.

Incorporate vegetables, lean protein sources, complex carbohydrates and healthy fats. When you plan a meal, aim for half of your plate to be vegetables. Even if your workouts are on track, if you aren’t pairing it with a healthy diet you aren’t maximizing your results. Check out: How to Eat Clean: 5 Tips for Success.

This doesn’t mean you can’t eat your favorite foods! Remember, the number 1 item on this list is consistency. To be consistent, you have to create a lifestyle that you can maintain. That means incorporating your favorites into your healthy lifestyle. Completely cutting out your favorite food can increase your chances of binging/over-eating.

Foods are not inherently Good or Evil. They have higher nutritional value, or lower nutritional value. Try to make 80-90% of your food choices have a higher nutritional value, and that gives you some wiggle room to incorporate other food items of choice.

If you have suggestions or techniques you have found successful post them in the comments section below.

20 Minute Tummy Toner Workout

Hi Everyone!
Today’s workout is focused on sculpting and toning your midsection. One round of this workout can be completed in 20 Minutes. I originally filmed this workout as part of my HIIT the New Year Hard: 30 Day Workout Challenge.  This routine will work you core from every angle, while also burning fat.
Often when people think of core workouts they think of crunches. To get a true core workout it’s imperative to work the muscles in all planes & through a full range of motion. A strong and balanced core helps protect your biomechanics and alignment for all other exercise and functional tasks you complete throughout the day.
Jesse and I are still in Los Angeles. We have a great new workout headed your way. I will get the new workout posted ASAP. It’s a full body challenge with plenty of cardiovascular fat burning. Be sure to check back for that routine! Our friends, Jayson and Jon tried the workout and found it very challenging. We followed up the workout with a walk/run, and plenty of walking in Hollywood as we visited the Walk of Fame and Grauman’s Chinese Theatre.

I hope you enjoy this core workout! Remember, your core is your support for everything you do! A strong core and back are the foundation you need for all other exercise.
Have fun with the workout!

Hi Everyone!

I hope you are ready to sweat! I have another throwback workout for you, our filming schedule is a bit off because we are traveling, but I will be posting workouts here all week. There will be some good new workouts for you too!

Today’s workout video is below. This is an intense 20-Minute HIIT workout. I was literally dripping sweat during this one.
This is a full body workout that will help you burn fat and sculpt lean muscle. Move at a pace that challenges you. You want to get in as many reps of each exercise as you can. It’s okay to breath hard and sweat. That means you are working at a higher intensity, and that is what gets you results!

I posted the picture above on my Instagram page. I wanted to make sure I filmed a new workout, so to eliminate any reason for excuses I dressed in my workout clothes and then layered it for a going out look. The easier you make your workouts fit into your schedule, the less excuses you have, and the more likely you are to stick with your program.

I am also re-focusing on healthy eating. Jesse and I are traveling right now, which always makes eating healthy and working out a bit trickier. It’s definitely motivating me to get some new workouts filmed, and really get on track with my nutrition.

See you soon!

PS Today I did one round of this workout and paired it with a 30 Minute Comfortable Pace run on the treadmill. I kept it at an 8.5 min/mile pace and got in 3.5 miles.

Hi Everyone!

This workout is a 12 Minute Leg & Arm Burnout Workout. It’s challenging, but effective. You will be dripping sweat by the end of the workout.

This workout combines Plyometric moves and Push-up variations. The intervals are shorter so be sure to push yourself to get in as many reps as possible without sacrificing form. You can substitute planks variations for the pushups if the movements become to intense. There is always a way to modify.

Jesse and I arrived in Los Angeles, California today. We are having a great trip so far! We will be filming some new workouts while we are here, but first I need to catch up on my sleep! The time change has me thrown off schedule. Properly resting your body impacts your health just as much as getting in a good workout.

Have fun with this routine. I will get a new one posted ASAP. Enjoy!

Hi Everyone!
I have a throwback workout for you today! Jesse and I are getting ready to go out of town so we didn’t have time to film a new workout last night.
This is workout #17 of my HIIT the New Year Hard Workout Challenge.  This is a full body, cardio, fat burning workout. It’s intense and very effective. According to my heart rate monitor I burned 179 calories during one 15-Minute round of the workout (and that doesn’t include the after burn!)
If you have followed my first 30 Day Instagram Challenge all of the moves in this workout will be familiar to you. I just finished up a second Instagram workout challenge, so you will be seeing those moves in a new workout soon too!
During the workout get in as many reps as you can during each 50 second interval. If you need to rest, take a quick break and get right back into it. The workout is supposed to be hard, and you are supposed to be working at maximum effort. You should be breathing heavy. You get out of your workouts what you put in.
That said, if you need to modify some of the moves that’s okay. For example:
-Burpee you can skip the pushup, and do a plank instead.
-Lunge Jump you can step forward, and squeeze before switching legs, instead of jumping.
-Ninja Jump: step both feet forward into a low squat and squeeze to stand.
You want to work to your maximum potential, so do the hardest variation that you can handle. If you aren’t up to the hardest variation yet, put this one your list to repeat. As you grow stronger you will be amazed at what you can accomplish.
I hope you all enjoy today’s workout!

Hi Everyone!

Today’s workout is a mash-up of one of my Boot Camp Workouts and a Weighted Workout. Jesse and I planned to do a VO2 Max Running Workout at the track today. A crazy thunderstorm blew rained on our plans, so we did these two workouts instead.

We did one round of each workout. It was challenging. My glutes were a little bit tired from yesterdays 15 Minute Standing Lower Body Workout. The Bender Boot Camp workout was filmed while I was training for my first NPC Bikini Competition, so I was very lean and strong. It was a good motivator for me to focus on making healthier food choices.

I was able to get through this workout faster this time, than I did when I filmed the video below. I did the workout along with the video, but if you prefer to do it interval style the breakdown is below. For the weighted workout we did 12 Reps of each exercise.

I hope you enjoy these workouts! It’s fun sometimes to go back and repeat some of my older workouts. They are still challenging for me!

Hi Everyone!

I have another new workout for you! This is a standing workout. The only equipment you need is a chair. I completed this workout as an interval workout, but you can also go through for reps. If you want to mix it up, do a round of each to vary the challenge.

This workout will work your lower body in all planes of motion. This recruits all of the muscles of the legs, thighs and butt during this workout. This technique helps create balance in your workout, and improve your biomechanics. Balancing strength in your body is an important aspect of protecting your joints, and ensuring you are able to maintain good form throughout each exercise.

Remember, even when you are going for time you want to ensure that you are completing each exercise with proper form. This helps you to maximize your results, while also decreasing your risk of injury.

Have fun with today’s workout! How many rounds are you going to do?

Hi Everyone!

I have a new workout for you! Today’s routine was challenging for me! There were a few times that I had to take breaks, before pushing myself to complete the reps. It was a great challenge, and I am glad I pushed through the workout.

I filmed today’s workout for Reps, but it can also be completed Interval Style. Both techniques challenge your body differently. I still kept the rest minimal in between each exercise to maintain a higher level of challenge. Remember, you can always pace the workout for your own fitness level. It’s a great idea to time the workout if you are going for reps. Write it on a calendar or fitness log, and when you repeat the workout see if you can finish faster, or progress the number of reps.

You can always pause the video (or fast forward if you get ahead of me!) Listening to your body is very important when you are working out. It will teach you how much you can push yourself. When you pay attention to your body you will also be able to recognize when you are growing stronger.

I used a stability ball and a dumbbell during today’s workout. If you don’t have the equipment at home, don’t worry! This workout can be done with body weight only. I demonstrate the variations in the workout video.

Have fun with today’s workout!

Track or Treadmill Workout for Faster Running Paces: 400 Repeats for a Faster 5K Pace

Standard

Hi Everyone!

Yesterday I got in a great running workout on the track. This is a great workout for improving your speed and endurance. If you want to become a faster runner you need to learn how to push your body, and how to pace yourself.

During races, or longer workouts, pacing yourself is key to successfully hitting your goal paces during a run. Most people can’t naturally lock into a pace and hold it there throughout a run. It takes practice to learn your pacing, but it will help you become a much more efficient runner.

The total distance for this workout is 5-Miles, but you can adjust the length of the workout for your own needs. You can do this by decreasing the number of repeats, and adjusting the length of the warm-up and cool down. This workout focuses on developing your Fast Twitch muscle fibers, while also incorporating endurance. More fast twitch muscle fibers translate to faster running speeds.

Equipment: Timer and Running Shoes.

400 Repeat Workout for a Faster 5K Time

Warm Up: 1-Mile at an Easy Pace

Workout:

Six 400 Meter Repeats (400 Meters= 1 Lap on a Standard Track or .25 Miles on a Treadmill) faster than your goal race pace.

After each 400 Meter Repeat do 400 Meters at a light/recovery pace.

Total Laps: 12

Cool Down: .5 to 1 Mile Easy Pace and Stretching

*Judge your paces based on your goal race pace. For example, if you want to run a 7:00 min/mile pace your 400 meter repeats should be 1 minute and 45 seconds.

Sub 30-Minute 5K Pace: 400 Meter Repeats in 2 Minutes and 23 Seconds.

8 Minute/Mile Pace: Each 400 Meter Repeat in 1 Minute 59 Seconds.

Push during your Hard paces, and use your jogging intervals for recovery.

Have fun! If you try this workout let me know what you think!

Hi Everyone!

I hope you’re ready for today’s workout! One round of today’s workout takes 15-Minutes. I completed this routine interval style (max reps during each 50 second interval with 10 seconds of rest between each exercise). This routine can also be completed for repetitions if you would like to vary the challenge.

For Reps:
Beginner: 10 Reps
Intermediate: 15 Reps
Advanced: 20 Reps

This is a full body workout. Be sure to warm-up before starting. A good warm-up improves the physical benefits you achieve during your workout.

Getting motivated for this one was tough for me. My sinuses/allergies have been going crazy due to all the rain and crazy weather we have been getting. I felt like it slowed me down a bit during today’s workout, but it still felt good to pushup myself and work up a sweat.

If you aren’t feeling 100% it can be tough deciding whether you should push through or take a rest day. If you have allergies or sinus problems you are most likely okay to work out. It is very important to listen to your body. I have a 5-Minute rule. If I really don’t feel like working out, I promise myself to at least push through 5-Minutes. If I really still feel bad I quit at the 5-Minute mark.

lack of motivation

Gambit was not helping my motivation. My sinus headache made me want to take a nap instead of working out.

Typically, once I start working out I feel much better and want to keep going. How do you motivate yourself to workout on tough days? I got in my workout, but kept it to one round, and skipped my run. I also went to bed super early to give my body some time to heal.

Have fun with this one!

Hi Everyone!

I hope you’re ready to get sweaty! Today’s workout will definitely get your heart rate up! This is a full body HIIT workout.

During this workout, focus on maintaining your form for each exercise, while also pushing for maximum repetitions. The goal is to rest during each 10 second interval, and go hard during each 50 second interval. For motivation it helps to write down your number of reps. When you repeat the workout try to beat the number of reps you originally did. It’s a great way to motivate yourself to push hard.

I am off to work, but I hope you all have a great day! Thanks for joining me for today’s workout! I am planning to film a new workout tonight, so that should be up tomorrow.

Have fun!

18 Minute Body Weight Workout: BenderFitness Glute Bender

Hi Everyone!

It’s workout time! Today’s workout takes 18-Minutes to complete one round. This is a full body workout with an emphasis on the glutes & thighs. During this workout I use a stability ball, but there are simple (and effective!) variations that can be done with no equipment.

Remember, there is always a way to modify a workout to suit your needs. It’s not about expensive equipment, you can challenge your body using body weight and/or items you already have around the house.

This workout can be repeat up to 3X, and can be performed as a HIIT workout (as I demonstrate in the video), or you can go for Repetitions. If you are doing more than one round, you can switch up the challenge by doing one round of HIIT & one round for reps.

Suggested Reps for each exercise:

Beginner: 10
Intermediate: 15
Advanced: 20

It is great for your body to mix up the challenge. Don’t be afraid to try something new! As always, you should preface your workout with a warm-up and finish with a cool-down and some gentle stretching. By warming up your body gets additional benefits & burn during the workout. The cool down allows your heart rate to come back to normal, and helps you maintain flexibility and decrease your chances of soreness and injury.

Have fun with today’s workout!

Hi Everyone!

Today’s workout is focused on shaping and strengthening the lower body. The lower body is a power house for your movements. Your bottom half also houses large muscles that help you torch calories during your workout.

Focus on pushing yourself while maintaining proper form throughout each exercise. The more you put in to your workout, the more you will get out. When you get the full range of motion during each exercise you are maximizing the benefits.

I hope you enjoy today’s workout. You can repeat it to increase the intensity. During today’s workout you will need dumbbells and a chair (or something sturdy to step up on).

Quick Dumbbell Exercises to Tone Your Arms & Back

Hi Everyone!

I hope you’re ready for today’s workout! It’s quick, but challenging. You can do this workout on it’s own, or combine it with cardio. I posted my 10-Minute Jump Rope workout below. A great option for this workout is alternating rounds with a round of jump rope (Dumbbell Workout-Jump Rope-Dumbbell-etc). This will allow you to work on strengthening and fat burning at the same time.

Another option is to pair this workout with my 15 Minute Standing Ab Workout. I combined these two workouts and I can definitely feel it in my lats (back), triceps (back of the arms), and core today.

When selecting a weight you want to choose an amount of weight that is challenging for you. If you are easily blasting through 20-reps you want to increase the weight. This will help you to improve your strength, get a higher calorie burn, and achieve shape and definition. Ideally you should be able to do 8-12 reps, with fatigue for the last two reps. Although your muscles will feel tired, the weight shouldn’t be so heavy that you are sacrificing form.

Tonight I have my Ballet Lesson, so that will be my workout tonight. One day per week I take a 90-Minute Ballet class. This is my “me time.” It’s something I do for pure enjoyment, because I love dancing and until recently I hadn’t danced at all until 2007, and hadn’t taken a Ballet class since 2001.  Soon I will have to film a Ballet inspired workout.

Have fun with today’s workout!

15 Minute Standing Ab Workout: No Crunch Core Exercises

Hi Everyone!

It’s workout time! By popular request I have a new Standing Ab Workout. All you need for this workout is a dumbbell or free weight. You can also perform the exercises with bodyweight only, but the additional challenge of the weights will increase the workout intensity.

When people think of exercises for the mid-section, traditional crunches often come to mind. There is a whole other world of core exercises out there! A stronger core will improve your balance, posture, and form during exercise (and throughout life!)

As usual with my workouts, we are still incorporating some strengthening for the legs, glutes and arms, but the main focus is on creating a tighter & stronger tummy!

I have a several other standing workouts. Many people can’t get down on the floor due to injury, workout location, or preference. You can find more standing workouts here: https://www.benderfitness.com/category/standing-workout.

I hope you all enjoy this workout! If you want to really increase the intensity you can add 30-50 seconds of high knees or jump rope between each exercise to increase the burn.

Have fun!
Melissa

Hi Everyone!

I sent out a call for Healthy Recipes recently, and Melody from www.TheMelodyofCooking.com responded! She has so many delicious recipes it was hard to choose just one to share with you all!

This Paleo Balsamic Grilled Chicken Recipe is on my menu, but I will also be trying the Acorn Squash Turkey Burgers in the near future.  I love food, and I love delicious, healthy eating. This recipe qualifies as both Healthy & Delicious, so if you like it be sure to check out her site. She is also on Instagram as @MelodyOfCooking.

Big thanks to Melody for sharing this recipe with us!

Enjoy!
Melissa

Cauliflower Mash:

cauliflower

1 Head of Cauliflower
Salt and Pepper
Grated Nutmeg (whole nutmeg has the best flavor)
(Optional: You can add Greek Yogurt for Creaminess, however, adding dairy would disqualify this as being Paleo).
Steam or boil the cauliflower until tender. Then puree with your food processor. Or you can mash with a potato masher.
Season to taste with salt, pepper, and nutmeg.
Balsamic Grilled Chicken:
4 Skinless Boneless Chicken Breasts
1/4 cup Balsamic Vinegar
1/2 cup Extra Virgin Olive Oil
Salt and Cracked Black Pepper
1 cup of Simply Balanced Organic Roasted Vegetable Pasta Sauce (Or sauce of choice)
Poke a few holes in the chicken breasts with a fork. Kind of like piercing potatoes before baking. This helps the marinade get all down and dirty in the chicken.
Mix the balsamic and extra virgin olive oil together. Pour over chicken breast. Let marinate for about 15 minutes.
Preheat your grill or grill pan to a moderate high heat. Not smoking hot. And not medium high. Somewhere in between those worlds.
Sprinkle chicken with salt and pepper. Grill for about 3 minutes per side. Just to get some grill marks and a sear on the meat.
Preheat a sauté pan to medium heat. Add the roasted vegetable sauce to a sauté pan along with chicken breasts. Now cover and lower heat to a simmer and continue to cook for about 10 minutes.
Side of Grilled Asparagus
1 lb fresh asparagus, washed and trimmed
1 tbsp extra virgin olive oil
Lemon juice
Salt and pepper
Just trim the ends. Toss them in a little extra virgin olive oil. Sprinkle with salt and pepper, squeeze a little lemon juice over. Grill for about 5 minutes. Turning halfway through.
**if your asparagus is thicker, just cook longer.**
Serve the chicken on top of Cauliflower Mash with a side of fresh grilled asparagus! Perfectly simple dinner party food. Or just a quick weeknight dinner.
Ta Da! Dinner is served!
